10.0The cuisine of Valle Gran Rey conserves the traditional culinary essence, based fundamentally on the produce of the land and the sea.


The ingenuity of the locals, arising from their constant struggle with the environment has given us a unique culinary legacy, among other things.


As a starter, we can choose from a wide variety of "potages" (stews and broths), including cress stew, accompanied by goats milk cheese, a typical dish that characterizes the flavor of this land.


It is a well know fact that "gofio" (toasted corn flour) is one of the bases of Canary Island cooking, so it is hardly surprising that it can be found on every table in Valle Gran Rey.

 

It is used to make a series of typical dishes like: "gofio amasado" (kneeded gofio) or "escaldado", served with starters or in mousse, nougat or even ice cream as a dessert.


Our lands produce a wide variety of cheeses. These are made to traditional recipes in Valle Gran Rey and although the amount produced is small, the flavor of each cheese varies, depending on who makes it, although they are all of excellent quality. Another product that has to be mentioned is "almogrote", a kind of pâté made from mature goat's milk cheese. It is delicious as a starter, served with the main dish, or with some bread or potatoes.


As Valle Gran Rey is a fishing harbor there is excellent fresh fish to be enjoyed, served up in a variety of recipes such as: pickled combers, baked red porgy, tuna with "mojo sauce", etc.


In the foot hills, small amounts of wine are produced for local consumption. These wines are made in the traditional way, producing a yellow colored white wine with an intense aroma and a pleasant taste on the palate.


One clear example of the ingenuity of the people of La Gomera is their palm honey, miel de palma, made by extracting the sap of the Canary Island date palm, commonly know as "guarapo". This is used to make honey which is part of the identity of the people of La Gomera. It can be used for almost everything from liqueurs (the well known "Gomeron" - or honey rum) to the famous La Gomera desserts (such as pastries and créme brulé).
